MIXED GREENS SALAD TAMARIND DRESSING

3 cups Spring mix lettuce 3/4 cup Jicama 1 ea. Carrot 2 ea. Radishes 3⁄4 cup Cucumbers, sliced thinly

1/8 cup Tamarind paste 1 1⁄2 tbsp. Honey 1 tbsp. Lime juice, fresh 1⁄4 cup + 1 tbsp. Water 1 ea. Garlic clove, minced 2 tbsp. Vegetable or olive oil

STEP 1

Combine the lettuce, jicama, carrot, cucumber and radishes in a large bowl. To make the dressing, in a small bowl, whisk tamarind paste and water together. Add the lime juice, honey, and garlic.

Slowly pour in the oil and whisk at the same time to create an emulsion. Season with salt and pepper. Pour dressing over salad, season with salt and pepper, and serve.
