I made this yesterday for breakfast and it was absolutely AMAZING! i will never buy store bought chorizo again!
WHAT YOU'LL NEED
– Tofu, extra firm – Mushrooms, finely chopped –Chile guajillo, dried, seeded – Chile ancho, dried, seeded – Chile de arbol, dried – Garlic – Oregano, dried – Cumin, ground – Cloves, whole – Paprika, ground – Coriander, ground – Apple cider vinegar – Vegetable oil, optional
Press tofu for 30 min. Crumble into a bowl
Soak chiles, blend with spices, and pour over tofu.
Sauté mushrooms, pour sauce over them.
Sauté tofu and mix with cooked mushrooms
Mix with potatoes
Mix with cooked potatoes to make tacos
