STRAWBERRY& JICAMA SALAD

1/2 cup Balsamic Vinegar 1/8 tsp. Mustard, Dijon 2 ea. Garlic, cloves 3/4 cup Vegetable or olive oil 3 tbsp. Water, room temperature 3/4 tsp. Honey

3 cups Spring mix lettuce 3⁄4 cup Strawberries 1⁄2 cup Jicama, cut into match sticks 1⁄4 cup Walnuts, roughly chopped

STEP 1

In a large bowl mix the lettuce, strawberries, jicama, and walnuts. To make the vinaigrette: Place vinegar, garlic clove, and mustard in a blender and blend on high until smooth. Lower speed to low/med and gradually pour in the oil through the top of theblender. The mixture  will thicken as the oil is blended in.

STEP 2

After all of the oil has been added, pour in 3 tbsp. of water, and honey.  Season to taste. Pour the desired amount of dressing on the salad, season with salt and pepper, and serve.
