PILONCILLO OATMEAL COOKIES

1 tbsp. Flax seed, ground 2.5 tbsp. Water 1⁄2 cup Piloncillo, grated 3 tbsp. Vegetable or coconut oil 1⁄2 cup Apple sauce 1 tsp. Vanilla extract 1 1⁄4 cup Old-fashioned rolled oats 3⁄4 cup All-purpose flour 1⁄2 cup Golden raisins, chopped 1⁄4 cup Pecans, chopped 1 tsp. Cinnamon, ground 1/8 tsp. Clove, ground 1 tsp. Baking powder 1⁄2 tsp. Baking soda

STEP 1

Preheat oven to 350F. In a small bowl combine flax seed, water, piloncillo, oil, apple sauce, and vanilla. Let sit for a couple of minutes. 3In a large bowl combine flour, oats, raisins, pecans, salt, cinnamon, clove, baking powder, and baking soda.

Pour the wet ingredients into the dry ingredients and use a wooden spoon to mix until combined.  Drop the dough by heaping tablespoons onto a parchment lined sheet tray, 2 inches apart. Flatten cookies slightly with your fingers. Bake in middle oven rack for 15 minutes or until golden brown.

Piloncillo is an unrefined whole cane sugar usually sold in a cone from. it can be found at your local hispanic market.
